Adventures in cooking...
As most of you know, I am generally afraid of cooking meat. I always think I'm going to undercook it and thereby plunge myself and my hubby into the bowels (pun intended) of food poisoning (even though I've never actually undercooked meat). Tonight, however, I tried something new with promising results: I cooked a meatloaf. I was inspired by a recipe from the latest issue of Cooking Light magazine--and it turned out fairly delicious. My anxiety about undercooking was mediated by the fact that I just had to stick the thing in the oven. Perhaps I'll even be able to move up to cooking a chicken breast or hamburger...

I think you take after G-ma Layton. She has to have meat cooked until it is tough and there us no possibility of pinkness, or softness, or juiciness! I'm glad you braved meatloaf. It sounds delicious! I'm reading Rachel's book, "The Omnivore's Dilemma". I don't know if I want to keep reading, I like meat a lot and prefer to keep it that way.
ReplyDeleteOh, by the way, my parents will be here in 3 1/2 hours for a visit!
ReplyDeleteAs a result of reading that book I starting buying meat from a small ranch just east of Oakland. No feed lots. No corn. I split a 1/4th of a cow with some coworkers.
